You can make this and serve it as an appetizer by cutting it into small pieces as well, just another though. Enjoy!
1 red onion, sliced
2 – 3 cups mushrooms
2 medium red peppers, sliced
3 – 4 tablespoons olive oil
6 eggs (organic)
1/4 cup egg beaters (You can use all whole eggs if you prefer, just add a couple more eggs)
2 – 3 garlic cloves, minced
1/4 cup sharp cheddar cheese
Salt to taste
Heat oil in a skillet and saute the peppers, onions and mushrooms for about 5- 7 minutes. Add the garlic and cook for another 2 minutes. In a separate bowl, beat the eggs and egg beaters.
Add the beaten egg and pour over the vegetables. (the mushrooms tend to give off some water so before I add the egg mixture and pour some of that liquid out). Turn the stove to the lowest setting. Let the egg just set, about 8 – 10 minutes. Add cheese over the top and put under the broil for about 3 – 5 minutes until egg is set and cheese is melted.
Cut in slices and serve with some salad.
